How to make Enchilada sauce

Last night I had a huge craving for enchiladas and decided to make my own sauce. It was delicious  and paired well with shredded chicken I had cooking in my crockpot. 

The recipe I used is as follows:

  • 2 1/2 cups chicken broth
  • 1/3 cup tomato paste
  • 2 1/2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 1/2 teaspoons oregano
  • 2 tablespoons soy sauce
  • 6 oz. tomato sauce 
  • salt & pepper to taste

Combine all ingredients in sauce pan and bring to a boil, reduce to a simmer until thickens to a consistency you like.

This recipe is super simple and a win in our house!

Yummmmm! I love making homemade enchilada sauce! In love I personally use double the amount of chilli powder lol. And I like to mix up the types of chilli powder, such as chipotle, ancho, etc.

#1 I think that it is more cost effective because most of the ingredients are already in the pantry, the taste is also so much better! 

#2 A crockpot is a slow cooker that has a ceramic basin and sits in an electric heater! I love using this in the winter months :) 

#3 Does the additional chili powder make it spicier? I found that the leftover enchiladas tasted better the next day.

#7 I have never tried it because I sense you need tomatillos for that and I can’t buy them here. But I am sure green enchilada sauce would be so yummy!

#8 I believe you do and that makes sense, can you possibly grow them in the summertime like a tomato?

This recipe looks really good! Would you recommend any tips with shredding chicken in general?

#13 I used to boil the chicken in water for 20 minutes and then drain and let it cool. Then shred the chicken with a fork.
