Last night I had a huge craving for enchiladas and decided to make my own sauce. It was delicious and paired well with shredded chicken I had cooking in my crockpot.
The recipe I used is as follows:
- 2 1/2 cups chicken broth
- 1/3 cup tomato paste
- 2 1/2 tablespoons chili powder
- 2 teaspoons cumin
- 1 1/2 teaspoons oregano
- 2 tablespoons soy sauce
- 6 oz. tomato sauce
- salt & pepper to taste
Combine all ingredients in sauce pan and bring to a boil, reduce to a simmer until thickens to a consistency you like.
This recipe is super simple and a win in our house!
