How To Make Fermented Red Onions

I have started making my own fermented foods. Fermented foods contain probiotic's. I love onions but I am not able to digest raw red onions. However, fermenting changes things. So, I have started my first two jars of fermented red onions. 

Recipe

1 quart pure filtered or distilled water

2 tablespoons of Kosher Salt

2 big red onions

One Mason Jar with fermenting lid. 

One glass weight to keep the onions below the water surface. If your onions touch air then they will mold and not ferment.

You watch and see when it stops making bubbles. Most veggies take about a week or ten days. You can taste them every 2 or 3 days to see how they taste. When you put them in the fridge it stops the fermentation process.

The recipe is almost the same as something called ”syra grönsaker” (leaven vegetables) in Sweden. The difference is that you also add some milk acid bacteria to the mix. I once heard that leavening is the only thing you can do to fresh vegetables that make them more healthy.

Yes, a little different. When you pickle, you add vinegar too.

#3 Probiotic's are healthy bacteria for your intestines. Kind of like yoghurt.

#5 When you pickle foods you don't get the benefit of probiotic's.

#7 It just depends on what you like. If you want tangy then pickling is great. However, you can add apple cider vinegar to fermented foods to get the tangy taste.
